Day 7: My Momma's Thumbprints

Boy, has it gotten cold out there! Today it was in the mid-20's, but the wind has been wicked! I think our overnight wind chill is going to be under zero. Yikes!


There's nothing better than a mug of hot cocoa and a few cookies to warm your soul on a cold, blustery evening.


Today I bring you a Thumbprint cookie. There are many variations on the thumbprint, including some with nuts, some without, some with frosting, some with jam, some chocolatey, some not so much. 





This recipe comes from my Mom. She's been making them at Christmas-time as long as I can remember. They are basically a shortbread cookie, not too sweet. With the addition of oats and chopped walnuts, they have a slightly nutty taste. The slightly crumbly not-so-sweet cookie base pairs wonderfully with the sweet frosting.


The frosting I used is a basic powdered sugar & milk combination, with a few tablespoons of melted butter thrown in the mix so it will set up. I also added almond extract, which is my Mom's favorite.



I colored the frosting hues of red and green, just like Mom. She never dyes the frosting too vividly, because she gets grossed out by foods with a really strong color. (She won't go anywhere near any food that is blue! Except for blueberries, and blueberry donuts of course... ;-) Love you, Mom!)


By the way, my Business Man  calls these cookies "Bird's Nest cookies." Funny how things have different names depending on what your family calls something! 


Question: Do you call these types of cookies "Thumbprints" or "Bird's Nests"?




Here's the recipe!




Thumbprints


  • 1 cup butter, softened
  • ½ tsp. salt
  • ½ cup powdered sugar
  • 1 cup oatmeal
  • 2 tsp. vanilla extract
  • ½ cup chopped walnuts
  • 2 cups flour
  • colored frosting, flavored with an extract (almond, orange, raspberry, coconut, ...)

Method

Preheat oven to 325*F. Mix all ingredients in mixer. Form into 1-inch balls. Press thumb in center of each. Bake for 20-25 minutes until golden. When cool, place colored frosting in the center of each.

The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Red Velvet Cake... Donuts

So this whole Valentine's Day coming up soon is definitely just an excuse for me to bake ridiculous things. Case in point: Red Velvet Cake Donuts . A few weekends ago, my Business Man and I visited the new Tim Horton's here in the Bean Town for the first time. I'd never set foot in a Tim Horton's before, and was pretty much enamored with all the flavors of donut holes, or "Tim Bits". Instead of just having to settle on one  or  two  donut flavors, I got to pick 10 different flavors for each of the Tim Bits in my 10-pack. (Well, I don't think they had 10 flavors... maybe only 6 but you get the idea.) They came in such a cute little package too! (Yes, I am a marketer's dream...) While I went the Tim Bit route, my Business Man went the traditional route - with an old fashioned sour cream donut. The Essential Summer Dessert

Last weekend, my Business Man and I hosted a fiesta for some of our friends in the Bean Town. While everyone enjoyed the food, I think dessert was the biggest hit. (Surprise, surprise.) We had brownies (from a box, the horror!) topped with chocolate ganache, and fruit pizza . Fruit pizza is most definitely my "go-to" summer dessert. Since it's the official 1st day of summer, I thought I'd share the recipe! It's delicious without being too heavy or rich. And it's most definitely healthy, because you are eating fruit, right? The recipe I use is my mom's... she's been using it for years. It starts with a basic sugar cookie base, topped with a cream cheese-whipped topping, and then all the fruit your little heart desires! I usually go with strawberries, blueberries, kiwi, pineapple, and mandarin oranges. But raspberries are really good, too. Even better when you pick the fruit yourself!
