Lemon Sticky Rolls

Ahhh... sweet rolls. The ultimate Sunday breakfast. Nothing better than a sweet cinnamon roll or sticky caramel pecan bun before church. However, I saw these Lemon Sticky Rolls  on Pinterest, and was immediately intrigued. Lemon?! Sounds a bit different, but definitely delicious! They sort of reminded me of these sweet rolls of my childhood - did anybody else eat these? Orange Sweet Rolls were the best! Since I was an only child, I always got the best  roll in the pan... the middle, ooey gooey one with all the extra frosting. What can I say, I might have been a bit spoiled. What's so great about these Lemon Sticky Rolls is that they're the perfect amount of sweet. You know how sometimes you eat a cinnamon roll, and you feel like you just ate a 3 lb. chocolate bar? Yea... these are not quite like that. They're a bit sweet, a bit tangy, a bit perfect. The filling is just a simple mix of sugar, ginger, and lemon zest. Kinda resembles sand, but makes your ...

Day 5: Chewy Lemon Cookies

Yes... lemon cookies. I'd never heard of lemon cookies before I came across this recipe, but I was definitely intrigued. I love lemon squares and lemon cupcakes and pretty much anything lemon poppyseed . So how could lemon cookies be bad? I mean, they're not the first cookie you would reach for after a long day at work or while watching chic flicks with your girlfriends. But, they have their place. Light and citrusy, these cookies will complement all the other rich cookies in my tins wonderfully. A nice light bite amidst all the sweet. Very refreshing.  And since they're lemon they're almost healthy. Key word: almost . The fruit serving cancels out the butter, right? Chewy Lemon Cookies Servings/Yield 2 dozen cookies 2 cups  + 2 tablespoons   all-purpose flour ½   teaspoon   baking soda ¼  teaspoon   salt ½   cup   unsalted butter, melted & cooled 1  cup   granulated sugar ¼   cup ...

When life gives you lemons.... make cupcakes?

I love spring.  However, I'm pretty sure whenever it's the beginning of a new season, I always love it at first. Even winter. The first month or so is exciting, and snow is fun. After 4 months though, I'm over it. That's when spring comes in. Warmer temperatures, spring flowers, lighter flavors. A girl can only eat so many casseroles. (Although we had a casserole for dinner tonight. It was delicious.) Yesterday my Business Man's brother sent me a link to a cupcake shoppe, Gigi's Cupcakes , that is located somewhat near him... just to tantalize my taste buds. It worked.  After spending a few several minutes this morning browsing the site and oogling the different flavor combinations, I came across one that I just had to re-create, ASAP. Sometimes you just get an inspiration and have to go with it. Immediately. I asked my Business Man if we could skip Sunday school to make cupcakes, but he didn't think that was a great idea. So I wa...

Spring has Sprung!

The birds are chirping, the sun is shining, and the grass is turning green again! Yay for spring! Spring weather makes me crave "spring" food. Like fruits and salads and quiches and asparagus and citrus. Lemon especially. I haven't posted a lot of breakfast recipes on the blog. On most days of the week, we usually just eat oatmeal, cereal, or a Clif bar on the way out the door. Hey, it's life. But on Sundays, I actually cook, err.... bake. Sundays are Fun-days in the kitchen! Usually I make some sort of muffin, sweet roll, or scone. Mostly scones. I love scones. I have posted about scones once before, right here .  That is my absolute favorite scone recipe. I am constantly changing up the mix-in ingredients. My favorites are cherry-chocolate chip, apricot-almond, blueberry-walnut, apple-cinnamon, and cranberry-orange. (Favorites? ha! That was five flavors right there.) I am constantly searching my brain for other flavor combinations that work would fabulou...
