Day 7: My Momma's Thumbprints

Boy, has it gotten cold out there! Today it was in the mid-20's, but the wind has been wicked! I think our overnight wind chill is going to be under zero. Yikes!


There's nothing better than a mug of hot cocoa and a few cookies to warm your soul on a cold, blustery evening.


Today I bring you a Thumbprint cookie. There are many variations on the thumbprint, including some with nuts, some without, some with frosting, some with jam, some chocolatey, some not so much. 





This recipe comes from my Mom. She's been making them at Christmas-time as long as I can remember. They are basically a shortbread cookie, not too sweet. With the addition of oats and chopped walnuts, they have a slightly nutty taste. The slightly crumbly not-so-sweet cookie base pairs wonderfully with the sweet frosting.


The frosting I used is a basic powdered sugar & milk combination, with a few tablespoons of melted butter thrown in the mix so it will set up. I also added almond extract, which is my Mom's favorite.



I colored the frosting hues of red and green, just like Mom. She never dyes the frosting too vividly, because she gets grossed out by foods with a really strong color. (She won't go anywhere near any food that is blue! Except for blueberries, and blueberry donuts of course... ;-) Love you, Mom!)


By the way, my Business Man  calls these cookies "Bird's Nest cookies." Funny how things have different names depending on what your family calls something! 


Question: Do you call these types of cookies "Thumbprints" or "Bird's Nests"?




Here's the recipe!




Thumbprints


  • 1 cup butter, softened
  • ½ tsp. salt
  • ½ cup powdered sugar
  • 1 cup oatmeal
  • 2 tsp. vanilla extract
  • ½ cup chopped walnuts
  • 2 cups flour
  • colored frosting, flavored with an extract (almond, orange, raspberry, coconut, ...)

Method

Preheat oven to 325*F. Mix all ingredients in mixer. Form into 1-inch balls. Press thumb in center of each. Bake for 20-25 minutes until golden. When cool, place colored frosting in the center of each.

The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. The Essential Summer Dessert

Last weekend, my Business Man and I hosted a fiesta for some of our friends in the Bean Town. While everyone enjoyed the food, I think dessert was the biggest hit. (Surprise, surprise.) We had brownies (from a box, the horror!) topped with chocolate ganache, and fruit pizza . Fruit pizza is most definitely my "go-to" summer dessert. Since it's the official 1st day of summer, I thought I'd share the recipe! It's delicious without being too heavy or rich. And it's most definitely healthy, because you are eating fruit, right? The recipe I use is my mom's... she's been using it for years. It starts with a basic sugar cookie base, topped with a cream cheese-whipped topping, and then all the fruit your little heart desires! I usually go with strawberries, blueberries, kiwi, pineapple, and mandarin oranges. But raspberries are really good, too. Even better when you pick the fruit yourself! (Picking berries on our honeymoon last July.) ...

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
