Day 16: Butterscotch Haystacks

See? I told you I would make them eventually! 


Today has been a wonderful day. I had a great day at school (kids weren't too crazy, despite tomorrow being our last day before break.) I even got a Christmas card from one of my students, along with a little bag of puppy chow. Receiving a hand-written note from a student has to be one of the most rewarding gifts a teacher can receive.


Tomorrow, we're having a more relaxed day at school. I made each of my classes some Brownie-Covered Oreos, and we will be making polyhedron Christmas ornaments. (Well, since we are in a public school, it has to be a "holiday" ornament. Bah humbug...)


Since I was busy making other things in the kitchen tonight, I kept today's cookie simple and easy: Butterscotch Haystacks!




There are many variations on this recipe. Some have marshmallows, some have peanuts, some have peanut butter. They all have butterscotch chips and chow mein noodles.


I usually go the easy way: Butterscotch chips and chow mein noodles. And that's it.


However, this year, I was feelin' a little spunky, so I threw some salted cashews into the mix. It wasn't a bad thing! They added a little extra crunch, and a little sweet flavor to go with the butterscotch.


[Side note: I was researching a bit on cashews just a minute ago, and in Brazil cashew fruit juice is very popular. Who woulda thunk?]


Anyways, these are the perfect cookie to round out your cookie tray for Christmas. Not quite the center stage, but still the cookie that can be relied upon when all the "showstoppers" are taken. Hope you enjoy!

Butterscotch Haystacks



1 12-oz. bag butterscotch chips
2 1/2 cups crispy chow mein noodles
3/4 cup salted, chopped cashews


Directions:


Melt butterscotch chips on MED power in microwave, stirring every minute until smooth. Stir in chow mein noodles and cashews. Drop by spoonfuls onto wax paper-lined baking sheets. Let cool until set. Then, eat!

The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! The Essential Summer Dessert

Last weekend, my Business Man and I hosted a fiesta for some of our friends in the Bean Town. While everyone enjoyed the food, I think dessert was the biggest hit. (Surprise, surprise.) We had brownies (from a box, the horror!) topped with chocolate ganache, and fruit pizza . Fruit pizza is most definitely my "go-to" summer dessert. Since it's the official 1st day of summer, I thought I'd share the recipe! It's delicious without being too heavy or rich. And it's most definitely healthy, because you are eating fruit, right? The recipe I use is my mom's... she's been using it for years. It starts with a basic sugar cookie base, topped with a cream cheese-whipped topping, and then all the fruit your little heart desires! I usually go with strawberries, blueberries, kiwi, pineapple, and mandarin oranges. But raspberries are really good, too. Even better when you pick the fruit yourself! (Picking berries on our honeymoon last July.) ...

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
