Day 12: Snickerdoodles!

My, my, it's been a long day. Snow has hit the Midwest hard, and of course it had to happen on the day I had to drive back to the Bean Town.

I left pretty early this morning, to try to stay ahead of the storm. The worst part of the drive was not the snow falling, but the wind! The wind was blowing the snow so much that I could hardly see at some points. However, I arrived safely, and it actually didn't take much longer than the usual drive. 


I indulged in my first peppermint mocha of the season today on my drive. In a red Starbucks Christmas cup and all! It was so tasty.

Anyways, when I got back to the Bean Town, I ran a couple errands, cooked dinner, and helped my Business Man at the office for awhile. I was not in the mood to bake an extensive and elaborate cookie, so I went for the simple classic Snickerdoodle.




These cookies remind me of Christmas, because of the cinnamon-spice scent that will fill up your house. (Or apartment, in our case.) I used Ceylon Cinnamon from Penzey's Spices, and I think it put the cookies over-the-top. So good! I just love everything from that company.


These are crisp on the outside, but soft in the middle, which is exactly how I like my Snickerdoodles. They make the perfect bedtime snack, just a little sweet treat before you go into dreamland. 



I imagine they would go great with a glass of egg nog, but I actually don't like egg nog. I actually stumbled across a few recipes for "Egg Nog Snickerdoodles," and I'm curious what they would be like. My Business Man would probably like them, as he loves egg nog. He and my mom are the only two people in my family that like it, so she always buys a small carton of it around Christmas just for the two of them to enjoy. (Isn't that precious?)


Here's the recipe! Enjoy!





Snickerdoodles


  • ¼ cup butter, softened
  • ¼ cup vegetable shortening
  • ¾ cup sugar
  • 1 egg
  •  cups all-purpose flour
  • 1 tsp. cream of tartar
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¼ cup sugar
  • 1 tbsp. cinnamon

Method

Preheat oven to 375*F. In mixing bowl, beat butter, shortening, and sugar until light and fluffy. Beat in egg. Combine flour, cream of tartar, baking soda, and salt in small bowl. Slowly add to the creamed mixture.

Combine 1/4 cup sugar and cinnamon in small bowl.

Roll dough into 1-inch balls, and then roll to completely cover in cinnamon-sugar. Bake in preheated oven 10-12 minutes, just until set. Let cool for 1-2 minutes on pack, them remove to wire rack.



P.S. Just found out we have a 2-hour delay already for school tomorrow!! Maybe it will turn into the first SNOW DAY?!?!?!

Hot Off the Press... [Chicken Bacon Bleu Panini]

So I totally forgot to post a panini recipe last Thursday... whoops. I'm sure you were all waiting with bated breath and were very  disappointed. Well, never fear, because I've got a fabulous panini recipe tonight! Tangy bleu cheese and salty bacon come together to form a delectable sandwich. The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. Anyways, I'm just popping in to share my beautiful new appliance. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. Mmm... chocolate buttercream! Making good use of the baking nook! :) Adios!

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
