Pool Days & Cake Pops

It's official. It's summer and HOT. And humid. I stepped outside yesterday morning to run at 5:30am and it was already 78*F. With 98% humidity. Fun, right?


Triple fisting it at breakfast yesterday morning with a smoothie, iced coffee, and ice water.
One of the beautiful things about the heat of summer is that I can go to the pool to cool off. A few friends and I have discovered the gem of the Wapakoneta Waterpark, which is only about 15 miles south of the Bean Town. And it's only $5 to get in!

Yesterday was our second visit, and it was glorious. There's two pools, two water slides, and two diving boards. One of the pools is a zero depth pool, so it's nice to sit with just your legs in the water. You just have to try not to get mauled by the tens of dozens of small children splashing around. Pretty sure I was kicked and/or smacked (not on purpose) at least 23 times yesterday.



The best thing? At every 0:45 on the hour, the lifeguards force all the kiddies out of the pool for "adult swim." Fifteen minutes of bliss with no splashing, no yelling, no threat of a small child's hand ending up down your swimsuit bottoms. 


That's a high dive. At least 10 ft. 


It also means no lines at the slide and diving board. You betcha I jumped off the high dive. Well, more like gingerly stepped off the edge and feared for my life, but it still counts.


What else does one do when it's super hot outside? Make cake pops, of course. Gotta find something to do inside in the cool air conditioning.





Ever since I've started making cake pops, I've envisioned a chocolate peanut butter flavor. My vision was confirmed when I found these peanut butter candy melts.




These cake pops are made up of chocolate cake mixed with chocolate frosting. (For more information on how to make them, go visit Bakerella. Better yet, buy her book!)





I then dipped them in the peanut butter candy coating, and covered some in chopped Reese's Pieces and some in chopped Reese's cups. Can you say sugar overload?






I'm nicknaming these the "Buckeye Pop." Appropriate, living in the Buckeye state, no? 





Very rich - not for chocolate weaklings. Like a Reese's on steroids. Very delicious steroids.

Now excuse me while I go prepare for my next workout... with some chocolate-pb goodness... mwahaha.

Looks like the perfect way to spend a summer day. It is crazy hot here in Illinois too...103 degree heat index! I need to find a pool like that to hang out at! Those cake pops look delicious...I am partial to the "buckeye pop", being a transplanted buckeye living in Illinois! Go bucks! :)

@sweetpeaskitchen- Funny! We are flip-flopped, I'm a transplanted Illinois-an living in Ohio... yea I don't miss that Illinois humidity but it seems to be just as bad here.
A Reese's on steroid! ha! love that description:) They look delicious:)

@Lindsey - I've eaten these cake pops and STILL had a small child put his hand down my swim suit bottoms on Tuesday. I think I need more cushion! haha :)

Hot Off the Press... [Chicken Bacon Bleu Panini]

So I totally forgot to post a panini recipe last Thursday... whoops. I'm sure you were all waiting with bated breath and were very  disappointed. Well, never fear, because I've got a fabulous panini recipe tonight! Tangy bleu cheese and salty bacon come together to form a delectable sandwich. It comes from the panini cookbook I received for Christmas, 200 Best Panini Recipes  (thanks Mom!) . The  Chicken Bacon Bleu panini :   grilled chicken, crisp bacon, and bleu cheese on sourdough with a spread of barbecue sauce and sliced red onion. I had never thought of putting bleu cheese on a panini before I saw this recipe. I feared there wouldn't be enough ooey gooey cheese! But bleu cheese actually melts pretty nicely. The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. Anyways, I'm just popping in to share my beautiful new appliance. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. Mmm... chocolate buttercream! Making good use of the baking nook! :) Adios!

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
