Hot Off the Press... [Turkey, Goat Cheese, & Caramelized Onion Panini]

It's that time of week! Panini press time...





This week's sandwich is a roast turkey sandwich with tangy goat cheese and sweet caramelized onions, on focaccia bread. Yes, Panera had some more exciting bread options this week. 


I discovered a package of cranberry goat cheese hiding in my fridge from a Trader Joe's trip back in December - it was like finding a hidden treasure! I had totally forgotten about it. (No worries, it was still perfectly safe to eat.)

I spread the bottom of the focaccia with the goat cheese. If you can find cranberry goat cheese, please use it. It definitely ups the flavor of this panini. I imagine you might be able to mix dried cranberries into regular goat cheese as well.





I then topped that with some roast turkey. We found the best turkey deli slices at Sam's Club... they actually taste like real meat, not slimy nasty stuff. 


Then the caramelized onions. They take a bit of time but are so totally worth it.





Then a bit of spinach (for color! and nutrition) and some more cheese, mozzarella this time. Gotta get the gooey factor somehow.





All pressed and ready to go!





Paninis are such a great quick dinner option. We've been loving our build-your-own panini nights. 





They're also a great way to use up leftovers... don't know what to do with the leftover pork bbq? Panini it! Got leftover hummus or dip? Panini it! Leftover cookie dough? Ehhh... maybe not so much.


In other news... we are expecting SNOW tonight! Woop woop! Although my Business Man & I just got back from working concessions at the girls' bball game, and it really wasn't doing too much. But if it could start a little after midnight and snow allllll the wee hours of the morning, I wouldn't hate it.


My Business Man even cleaned out the garage real quick tonight so we could actually park our cars in there. Who wudda thunk?

Although it's pretty tight. He made sure to tell me to be very careful, like the most careful I could ever be, when I'm pulling in and out... hehe. It's not like I ever have problems driving, no never.

Turkey, Goat Cheese, & Caramelized Onion Panini


  • 1 sweet onion, thinly sliced
  • 1 teaspoon olive oil
  • pinch salt
  • 1 small loaf focaccia bread
  • ¼ cup goat cheese, (cranberry goat cheese if you can find it)
  • 4-oz. roast turkey breast
  • 2-3 oz. sliced mozzarella cheese
  • handful fresh spinach

Method

For caramelized onions, cook onions (with salt) in olive oil over medium-low heat 20-25 minutes until caramelized, stirring frequently. Set aside.

To prepare sandwiches, cut the focaccia in half to separate it into two sandwiches. Then cut each sandwich lengthwise, to separate it into the top half and the bottom half.

Spread the bottom half with goat cheese; top with turkey. Top with caramelized onions, spinach, and mozzarella cheese. Place top half of bread on sandwich.

Cook in a panini press on high 3-4 minutes until crisp on the outside.

I did not even that cranberry goat cheese existed. I already told Ian that when we move back to America, I am going to buy cheese every time I go to the grocery store. These look delicious...great creation, Sara! I hope you get a snow day or maybe at least a delay :)

Alissa! I cannot wait for you to come back to America and come to Ohio and we can go to Trader Joe's and cook for a whole weekend. Kristi and I are making a baking weekend a Christmas tradition and you should totally come. It just hit me that you will be back rather soon! (Relatively speaking.)

And we did get a snow day!! Woot woot... the excitement of the day will be running my first long run for the marathon on the treadmill later this morning, just gotta let the oatmeal digest first. :)

Sara your recipes are fantastic! I need to get me one of those sandwich presses. There's this grilled veg and portobello sandwich I make on ficocia bread and it would be so much better in that :)

So I totally forgot to post a panini recipe last Thursday... whoops. I'm sure you were all waiting with bated breath and were very  disappointed. The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. Anyways, I'm just popping in to share my beautiful new appliance. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. Mmm... chocolate buttercream! Making good use of the baking nook! :) Adios!

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
