Butternut, Bacon, Gouda... on a pizza

Squash. I'm sure you've seen this a lot lately.


Horrible lighting, delicious pizza.
As a matter of fact, I've had one sitting on my counter since the end of September. Have I used it yet? Umm.... have you ever tried to cut into and peel a butternut squash? Not so much fun.

However, at Sam's Club last Saturday, I found peeled & cubed butternut squash, all nice and neat in a little package. For just $3.98. So much easier.

So the squash still sits on my counter. But I did actually cook the squash from Sam's.


First, I roasted it with some garlic, salt, and pepper. It was delicious just like that.


But then I made it even better - topped pizza dough with it. Along with bacon. And gouda. And caramelized red onion. Oh my. 


Between my Business Man and I, there was one measly little piece left at the end of the night. Heh.


I intended to make this recipe again next weekend (when I could get some good daylight photos), but decided I couldn't wait that long to share. It's that good. But trust me, I will be making it again. For the pictures, yeah.



Butternut, Bacon, & Gouda Pizza


  • 1 batch pizza dough, your choice
  • 2 cups peeled & cubed butternut squash
  • 1-2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • salt & pepper
  • 4 slices thick-cut bacon, diced
  • 1 red onion, sliced
  • 1 ½ cups Gouda cheese, shredded
  • ½ cup grated Parmesan

Method

Preheat oven to 450*F. Place squash in baking pan, and drizzle with olive oil. Top with minced garlic, salt, and pepper; stir until evenly coated. Roast for 45 minutes, stirring every 15 minutes.

Meanwhile, saute bacon pieces in skillet until crisp. Remove bacon to paper towels to cool. Drain all but 1 tablespoon bacon fat. Over low heat, saute sliced red onion until caramelized, stirring every few minutes.

When squash is ready, prep pizza dough. (Whichever type you are using.) Drizzle pizza dough with olive oil, and top with about 1/2 cup Gouda cheese. Top with squash, bacon, and caramelized onion. Top with the rest of the Gouda cheese and Parmesan. Bake according to pizza dough directions until crust is golden and cheese is melted.

Hot Off the Press... [Chicken Bacon Bleu Panini]

So I totally forgot to post a panini recipe last Thursday... whoops. I'm sure you were all waiting with bated breath and were very  disappointed. The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. Anyways, I'm just popping in to share my beautiful new appliance. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. Mmm... chocolate buttercream! Making good use of the baking nook! :) Adios!

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
