Today started out fabulously! A 2-hour delay for school. We never ended up having a snow day yesterday. (Although every school within 30-miles of us had one...) But, it was nice to have a chance to sleep in a bit today. I made it to the gym to run before work, which was wonderful since I didn't have to get up at 5:15am to do it. That freed up my afternoon for some errands! I ran to Meijer and Hobby Lobby for a few things. I just love having Hobby Lobby so close to us! It is very convenient for those last minute crafting needs. (More to come in a future post...)
Anyways, today's 'cookie' is just some simple Chocolate-Covered Pretzels. These aren't limited to Christmastime, but my Mom and I have made them every year since I can remember. We would melt the white chocolate in her old plastic pyrex measuring cup (which has definitely seen better days...), and then we would both try to dip the pretzels at the same time, fighting over the chocolate. Good memories!

Making these is super simple. All you have to do is get some almond bark, white or dark. Melt it according to the package directions. (I use the microwave.)
Then throw a few pretzels in... dunk 'em around a bit... and pull them out. I use a fork because then the extra can drip off more easily.
After you dip 'em, lay the pretzels out on a wax paper-lined baking sheet. Or foil or parchment paper. Whatever works for you.
While they're wet, you can sprinkle with with sprinkles. Or you can drizzle them with extra almond bark once they set up a little.
Chocolate-covered pretzels remind me of a special treat our old neighbors would make my family every Christmas. Bob & Bertha were the very elderly couple that lived next door to us over at our first house in Peoria. They were very elderly when we moved out, and that was almost 20 years ago! They are still alive and kickin', and we try to go visit them once a year, usually around Christmas.
One of the treats Bertha always made was this: Take two Ritz crackers, spread peanut butter between them, and then dip it in chocolate. Yum! Kinda similar to a Girl Scouts' Peanut Butter Patty cookie.
So, I thought I would make a few of these up today, just to test it out. Then I realized the only type of Ritz crackers we have our the 'Roasted Vegetable' flavor. Somehow I don't think it would be quite the same. So I will save that adventure for another day.
