Yes... lemon cookies. I'd never heard of lemon cookies before I came across this recipe, but I was definitely intrigued.
I love lemon squares and lemon cupcakes and pretty much anything lemon poppyseed. So how could lemon cookies be bad?
I mean, they're not the first cookie you would reach for after a long day at work or while watching chic flicks with your girlfriends. But, they have their place.
Light and citrusy, these cookies will complement all the other rich cookies in my tins wonderfully. A nice light bite amidst all the sweet. Very refreshing.
And since they're lemon they're almost healthy. Key word: almost. The fruit serving cancels out the butter, right?
In medium mixing bowl, combine butter with sugar and brown sugar; whisk until smooth. Add in egg and egg yolk, mixing to combine, and then whisk in lemon juice, lemon zest, and vanilla extract. Stir in dry ingredients, mixing vigorously with a spatula or wooden spoon, until it comes together. It will!
Roll into 1-inch balls and place on a baking sheet. Bake for 9-12 minutes, or until middle is just set and edges are slightly golden.

Chewy Lemon Cookies
Servings/Yield
2 dozen cookies- 2 cups + 2 tablespoons all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, melted & cooled
- 1 cup granulated sugar
- ¼ cup brown sugar
- 1 egg
- 1 egg yolk
- 2 tablespoons freshly squeezed lemon juice
- 2 teaspoons freshly grated lemon zest
- 1 teaspoon vanilla extract
