Day 10: Cake Batter Truffles

Last year, I made Cookie Dough Truffles during my 25 Days of Christmas Cookies challenge, and they were very well-received by all who ate them. How can you go wrong with chocolate chip cookie dough that has absolutely no possibility of making you sick, enclosed in a layer of chocolate?

I thought I'd go with the same idea and try out these Cake Batter Truffles. What is it about cake batter and cookie dough that get people (and by people, I mean myself) so excited? Sometimes I'd almost rather eat the batter or dough than the finished product.

And clearly I'm not the only one, with the abundance of cake batter ice cream, cake batter rice krispy treats, cake batter blondies, and even cake batter pancakes (?!) out there in the world.

These truffles are just a little taste of cake batter enclosed in a chocolate (or vanilla) coating. The perfect little sweet treat, all wrapped up in its own little shell.

I added my own sprinkles so they would be more Christmasy, but you could certainly just use a Funfetti cake mix.

Such a cute twist on a favorite!

Cake Batter Truffles

  • 14-oz. can sweetened condensed milk
  • 3 tablespoons butter
  • 1 cup yellow cake mix
  • 3-4 tablespoons sprinkles, of your choice
  • candy coating, chocolate or vanilla

Method

Combine sweetened condensed milk and butter in a small saucepan over medium-low heat. Heat until mixture can hold a line when a spatula is drawn through the center, stirring constantly. This will take about 15-20 minutes. Stir in cake mix. Let cool 20 minutes.

Stir in sprinkles. Lightly butter hands (or spray with cooking spray) and roll into 3/4-inch balls. Place on parchment-lined or wax paper-lined baking sheet. Refrigerate truffles about 20 minutes.

Meanwhile, melt your candy coating ready according to package directions. Remove truffles from refrigerator and dip into candy coating, and place back onto baking sheet. If you want to top with sprinkles, do so while the candy coating is still wet. Set dipped truffles aside to set.

The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. Anyways, I'm just popping in to share my beautiful new appliance. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. Mmm... chocolate buttercream! Making good use of the baking nook! :) Adios!

The Essential Summer Dessert

Last weekend, my Business Man and I hosted a fiesta for some of our friends in the Bean Town. While everyone enjoyed the food, I think dessert was the biggest hit. (Surprise, surprise.) We had brownies (from a box, the horror!) topped with chocolate ganache, and fruit pizza . Fruit pizza is most definitely my "go-to" summer dessert. Since it's the official 1st day of summer, I thought I'd share the recipe! It's delicious without being too heavy or rich. And it's most definitely healthy, because you are eating fruit, right? The recipe I use is my mom's... she's been using it for years. It starts with a basic sugar cookie base, topped with a cream cheese-whipped topping, and then all the fruit your little heart desires! I usually go with strawberries, blueberries, kiwi, pineapple, and mandarin oranges. But raspberries are really good, too. Even better when you pick the fruit yourself! Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph. I'll try better next week to make it a little more exciting. Weekly Rundown 1.7.2013-1.13.2013 Mon - 8.2 miles easy Tues - 8.3 miles easy Wed - 4x1200m @ 4:29 (4:32, 4:31, 4:31, 4:34);...
