Day 6: Almond Cake Bars

Growing up, my mom made these cookies for her cookie tins every year. It's an old family recipe, passed down from my great-uncle Fran and probably even someone before him.





As a child, I always turned my nose up at these... why would I bother eating the plain-looking bar cookie with nuts? There were chocolate and sprinkle-covered cookies to be eaten!




However, a few years ago when I was home on break from college, I decided to give one of these a try, not expecting much. I don't know what I was thinking... because these are now one of my absolute favorites.


Chock-ful of almond flavor, these bar cookies are almost like an almond-flavored version of a brownie. My Business Man couldn't keep his hands out of the container, and that's sayin' a lot, because he's not the biggest sweets person. (Unlike myself... the girl who must eat dessert everyday. Sometimes even twice a day.)




Lesson learned... never judge a book cookie by its cover appearance.

And a note - you must use margarine! I wanted to replace it with butter, but at the strict encouraging of my mom, I didn't. Quote (as she read me the recipe over the phone): "It specifically says on the recipe DO NOT USE BUTTER!" So you'll have to buy some margarine for this cookie.

Almond Cake Bars


  • 1 cup margarine
  • ¾ cup sugar
  • 1 egg, separated
  • ½ cup almond paste
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • ½ cup sliced almonds

Method

Preheat oven to 350*F. Grease an 8x8-inch baking pan.

In mixing bowl, blend margarine and sugar until smooth. Add egg yolk and beat until smooth. Add almond paste and almond extract; beat until smooth. Add flour and beat until just combined.

Spread batter into prepared pan; it will be thick. Beat remaining egg white until foamy, and brush onto bars. Top with sliced almonds; press them in so they will stick.

Bake in 350*F for 30-35 minutes, until golden brown and set. Let cool; cut into squares.

The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. The Essential Summer Dessert

Last weekend, my Business Man and I hosted a fiesta for some of our friends in the Bean Town. While everyone enjoyed the food, I think dessert was the biggest hit. (Surprise, surprise.) We had brownies (from a box, the horror!) topped with chocolate ganache, and fruit pizza . Fruit pizza is most definitely my "go-to" summer dessert. Since it's the official 1st day of summer, I thought I'd share the recipe! It's delicious without being too heavy or rich. And it's most definitely healthy, because you are eating fruit, right? The recipe I use is my mom's... she's been using it for years. It starts with a basic sugar cookie base, topped with a cream cheese-whipped topping, and then all the fruit your little heart desires! I usually go with strawberries, blueberries, kiwi, pineapple, and mandarin oranges. But raspberries are really good, too. Even better when you pick the fruit yourself! (Picking berries on our honeymoon last July.) ...

Boston Marathon, week #3

Last week was a great week for training - lots of easy runs, a V02-max workout, and my first long run that actually felt 'long'.  The goal was to get in 50-55 miles, and I ended up with 56ish, so right on target. Saturday's long run was glorious ! Temps in the 50's in January (!) makes me a very happy runner. I headed out for 16-17 miles and ended up with almost 18. And I remembered to bring fuel!  I tried out the blueberry-pomegranate Gu chomps, and they weren't my favorite. I ate one every 2 miles once I hit the 8-mile mark and they left a strange aftertaste. Pretty much as soon as the aftertaste went away, it would be time to eat one again. I'm thinking I will try something else next time.  This was the week of the 8's... what a monotonous bar graph.
