24 weeks + all the fried food

Week 24, and according to the Junk Food Baby Chart, Poppyseed is now the size of a banana split! He's majorly moving around, which is so much fun. His tastebuds are also developing, and his lungs are getting quite strong!

No real big highlights this week... my SI joint pain has lessened quite a bit. I guess all those stretches and exercises from the chiropractor really do help! I am thinking in 2-3 weeks I might be back to my usual self. (Fingers crossed!) At least daily activities have become much less painful and I even snuck out for a short run tonight! (Which was actually in my 25th week, so I'll wait and talk about that next week... lol.)

Main foodie highlights this week - all the fried food! Seriously, by the end of the weekend I felt like crap. I was so excited to cook a healthy meal yesterday.

Friday night, I had the biggest craving for Chinese food, so we went out. (I think my Business Man's jaw dropped when I suggested Chinese... he loves greasy takeout and usually I think it's disgusting.) However, this Sesame Chicken totally hit the spot.

We followed up Saturday night with a southern food feast at our friends Candace and Jonathan's house. They are from Mississippi/Florida and cooked up a feast! Fried chicken, lima beans, creamed corn, fried okra, cornbread, chicken 'n' dumplings.

Biscuits, fried cabbage, fried okra, fried mac & cheese, fried chicken. Oh, and fruit.
My contribution was deep-fried macaroni & cheese bites with bacon jam. Yes, BACON JAM. They were amazing. I got the recipe from Magnolia's, our favorite restaurant in Charleston.

Sunday, we had a church activity and there was literally a buffet of chips. My weakness. (Of course there was regular food, too... pulled pork, coleslaw, fruit, etc.) I loaded up my plate with Doritos, Cheetos, Cheddar & Sour Cream Lays, and Dill Pickle Lays. I was in quite the chip coma afterward. (And yet still bought a new bag this week at the store - Mango Salsa Wavy Lays! I have to be able to vote in the contest, right??!)

And so concluded my weekend of unhealthy eating... but not before I made a quesadilla out of leftover buffalo chicken dip for dinner Sunday night. Haha. No worries, I've had a plethora of fruits & vegetables today - spinach, celery, apples, blueberries, cherries, pickles, tomatoes, salad. Feeling much better.

24 Weeks - The Facts

Poppyseed's size: The length of an ear of corn, but about 1.25-1.5 lbs. Now is when he really starts to chub up!

Sleep: Some nights, great, some nights not so great. Somehow when I wake up for my 3am potty break, my mind gets racing and it takes 2-3 hours to fall back asleep. This morning I woke up wide awake and ready to go at 5:15am. So I got up and started my day.

Movement: Still feeling it a lot! Poppyseed is especially enjoying the loaf of banana chocolate chip bread I made earlier this week.

Running: Zero runs. But two swims and three cross training workouts.

Cravings: Still a weird appetite... some days I'm ravenous and some days I'm not hungry at all. But I could always eat a bowl of macaroni & cheese. And cheesy things in general.

Looking forward to: Seeing what poppyseed looks like! I've started thinking about that a lot lately. Can't wait to see his cute little face. I mean, I'm assuming he'll be cute. At least to us. ;)

Day 7: Buried Cherry Cookies

I don't remember where my mom & I got this recipe... we started baking these about 8 years ago. And haven't stopped since! The name says it all - there is a 'buried cherry' in each cookie. The cookie itself is chewy and chocolatey, and inside there's a surprise cherry! It's all topped with a unique type of frosting; it is poured over the cookie before  it's baked. It's like a cookie version of a chocolate-covered cherry! (Without all that nasty sweet white goo inside...) Here's a step-by-step break-down: Roll the dough into 1-inch balls. Make an indentation in each ball. Place a cherry in each indentation. Make the frosting. (And don't forget to lick the spoon. And scrape the sides of the pan.) Top with the frosting. Bake! Hot Off the Press... [Chicken Bacon Bleu Panini]

So I totally forgot to post a panini recipe last Thursday... whoops. I'm sure you were all waiting with bated breath and were very  disappointed. Well, never fear, because I've got a fabulous panini recipe tonight! Tangy bleu cheese and salty bacon come together to form a delectable sandwich. It comes from the panini cookbook I received for Christmas, 200 Best Panini Recipes  (thanks Mom!) . The  Chicken Bacon Bleu panini :   grilled chicken, crisp bacon, and bleu cheese on sourdough with a spread of barbecue sauce and sliced red onion. I had never thought of putting bleu cheese on a panini before I saw this recipe. I feared there wouldn't be enough ooey gooey cheese! But bleu cheese actually melts pretty nicely. It's no Velveeta, but it added a great tang to the sandwich.  First, spread the bottom piece of bread with a bit of barbecue sauce, and top with some grilled chicken. The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! Isn't she a beauty? It is so nice to have a fridge again. You don't realize how much you miss a full-size refrigerator until you go a couple weeks without it. A bit bare... but that can be solved easily. Bottom-drawer freezer, containing the essentials: moose tracks & Diet Dew trying to get cold asap. Anyways, I'm just popping in to share my beautiful new appliance. The baking monster has taken over, and I'm in the midst of making 150 cupcakes for a graduation party tomorrow.  First big baking project in the new kitchen! I'm loving all the counter space. Mmm... chocolate buttercream! Making good use of the baking nook! :) Adios!
