Pizza Pizza

If you've been around for any amount of time at all, you've probably noticed I love pizza. Thin-crust pizza, deep dish pizza, flat bread pizza, pizza bread. You name it, I'll eat it.




Lately, we've been making a lot of pizza at home. Okay, we always make a lot of pizza at home. Especially now that I discovered you can buy blobs of frozen pizza dough at Meijer for about a dollar. Or the pre-baked ones for just a bit more. 


I've been trying to get more adventurous with toppings - forgoing the usual tomato sauce for garlic sauce, adding spinach or sun-dried tomatoes, different cheeses.


This pizza originated when I was talking to a good friend on the phone, and she was telling me all about this caramelized onion & fig pizza. I've never even had figs before, and it sounded delicious. Too bad nobody here in the Bean Town eats figs either, because I couldn't find them anywhere.



Onto plan B. I saw a recipe for Peach & Gorgonzola Pizza and decided to incorporate the two recipes together. I also added some chopped ham and fresh basil.




It was delicious. The sweet caramelized onions and juicy peaches went perfectly with the tangy gorgonzola and salty ham. If you like sweet & savory together, you'll like this.. The only thing I'd do different next time is use bacon instead of ham. Because bacon makes everything better.

Mine is Cheesecake Factory's BBQ Chicken Pizza. I always say I will order something different when we go, but I always get the pizza. Every time!




Caramelized Onion, Peach, & Gorgonzola Pizza


  • 1 prepared pizza crust 
  • 1 sweet onion, sliced
  • tbsp. olive oil, divided
  • 1 cup shredded mozzarella cheese
  • 1 fresh peach, thinly sliced
  •  cup chopped ham or cooked bacon
  • ¾ cup gorgonzola cheese, crumbled
  • ¼ cup fresh basil chiffonade

Method

Preheat oven to 425*F. Prepare pizza dough according to your recipe or package directions.

Saute onion in 1 tbsp. olive oil over medium heat until golden brown and caramelized, about 10-12 minutes. Set aside.

To prepare pizza, brush remaining 1 tbsp. olive oil over dough. Top evenly with mozzarella cheese. Top with onions and peaches. Add chopped ham or crumbled bacon. Top with gorgonzola cheese.

Bake according to recipe or package directions. When done sprinkle fresh basil over the top. Slice and enjoy!

Yum! Too bad my hubby hates all strong cheeses, like gorgonzola, goat, etc. (so, in other words, the really good ones). Maybe I'll make us personal pizzas sometime, and he can have something boring while I chow down on this ;)

Anyway! I normally don't comment, but now that I know you're a great pizza lover too, I had to share the most-amazing pizza recipe ever! It's a Mexican pizza, with seasoned black bean puree for sauce, topped with pepper jack and mozzarella, tomato, onion, and corn. If you cut this dough in half, you have enough for one medium - large pizza (depending on the thickness of the crust). I was out of white whole wheat when I first made it, and just did a whole wheat/all-purpose mix (about 2/3 wheat, 1/3 app), and it turned out great!

Lately, I've been making chicken alfredo pizza quite often! I just season the chicken with lots of Italian seasoning and cook it on the stovetop with some olive oil. Top my pizza crust with alfredo sauce, mozzarella cheese and the chicken before throwing it in the oven. SO good.

My favorite pizza is probably Chicago style deep dish pizza. Spinach and chesse! So good!
Love this idea! In georgia there are peaches everywhere right now so why not put them on a pizza? May try this tonight, I was hoping for pizza anyway!

Samoa-what?

So. Last night I did some baking. For my Business Man. Leaning tower of... cookie bars? Before I tell you all about it, let's rewind a bit... Last week when I was gone traversing the Midwest , our order of Girl Scout cookies came in. (finally!) They got here on Monday. Day 8: Brownie-Covered Oreos

Today's cookie recipe has two ingredients. Yup, just two! Brownie mix and a package of Oreos. So simple that my Business Man could make them! I saw this recipe over at Picky-Palate , and immediately had to try it. I love incorporating Oreos into my baked goods. We even had Oreo Cupcakes at our wedding! And who could forget about Oreo Truffles? (Also known as Snowman Poop in my circle of friends...) After tasting them, I must say these are divine! And so simple. Perfect for the chocoholic in your life. (aka me!) The cookie gets a little soft inside the brownie, and it's just a chocolate explosion in your mouth! You will want to have a glass of milk handy. Just have to show off our tree some more! First things first, mix up your brownie mix. If you want a lot of Brownie-covered Oreos, use a large brownie mix. If you don't need as many, use a smaller brownie mix. My favorite brownie mix is Ghiradelli , but it can be kinda pricey. Usually I just buy what's on sale....

Day 7: Buried Cherry Cookies

I don't remember where my mom & I got this recipe... we started baking these about 8 years ago. And haven't stopped since! The name says it all - there is a 'buried cherry' in each cookie. The cookie itself is chewy and chocolatey, and inside there's a surprise cherry! It's all topped with a unique type of frosting; it is poured over the cookie before  it's baked. It's like a cookie version of a chocolate-covered cherry! (Without all that nasty sweet white goo inside...) Here's a step-by-step break-down: Roll the dough into 1-inch balls. Make an indentation in each ball. Place a cherry in each indentation. Make the frosting. (And don't forget to lick the spoon. And scrape the sides of the pan.) Top with the frosting. Bake! And then wonder what to do with the leftover 1/2 can of sweetened condensed milk. (What kind of recipe only calls for 1/2 cup?) I guess I could be like my friend Jen , as she tol...
