My Business Man and I have a strange obsession with Subway's Orchard Harvest Chicken Salad. It is just so good. It's light and crisp, and just so fresh-tasting! It was the one thing I craved when I finished my marathon. So yes, I had Subway for lunch after running a marathon. Not quite what you would expect, eh? (Usually I go all out and splurge on my eats after a big race.)


Anyways, I was determined to make my own version of the Subway sandwich. Because, in all honesty, $5 for a sub is still quite a bit of money, when you could have enough chicken salad for eight subs for just a few dollars more. I've made this several times already... it's that good! We even made it for our assigned 'lunch' meal at our beach weekend with friends. It was very well-received.




It's made up of chicken (duh!), crisp Pink Lady apples, golden raisins, dried cranberries, chopped celery, and of course some light mayo to bind it together. Flavored with salt, pepper, and a little cayenne pepper. Pretty simple.


I think one of the keys to this chicken salad being so tasty is the rotisserie chicken. I know that it is more cost-effective to purchase raw chicken and boil it for the meat, but rotisserie chicken just adds that extra oomph of flavor. 




My favorite way to serve this chicken salad is on King's Hawaiian rolls. They are so soft and squishy and sweet and delicious. Or you could go the more health-conscious route and use some good ole' whole grain bread. That would be just as tasty.


Orchard Harvest Chicken Salad



  • 1 rotisserie chicken
  • 2 stalks celery, chopped
  • 2 Pink Lady apples, peeled and diced
  • ¼ cup golden raisins
  • ¼ cup dried cranberries
  • ½-¾ cup light mayonnaise
  • salt, to taste
  • pepper, to taste
  • cayenne pepper, to taste


Method

Carve rotisserie chicken, and discard all skin and bones. Dice chicken into small chunks. Combine chicken with celery, apples, golden raisins, and dried cranberries in a large bowl. Add mayonnaise, as much to your liking. Season with salt, pepper, and cayenne pepper to your liking.

You can eat it right away, but it gets much tastier as it sits in the fridge for several hours. (The flavors get a chance to blend together.) Serve on Hawaiian rolls.

This looks good! I might have to try this asap as well. I am always looking for an easy sandwich that isn't cold cuts!
I like this! I'm in such a routine with sandwiches, this is something new for me. That Subway commercial song is so dang catchy. When it's stuck in my head I CANT get it out!

i.can't.remember.the.song. I know that there is a commercial with these words in it for subway, but I can't remember the tune. BAH! Further proof I am becoming less American! bah! It looks delicious, I think I am going to cook/bake through your whole blog once we get back :)

Do you think halved grapes would work in lieu of the dried fruit?

Jen- Probably. It would just bring a different texture. Juicy instead of chewy. I might try that next time! I've also toyed with the idea of adding pecans or walnuts.

The Arrival of Something New...

Woo hoo for the last Friday of the school year! And only one more day of school next week. (And then a couple teacher workshops...) Another reason to be excited? Our fridge came today!! The Essential Summer Dessert

Last weekend, my Business Man and I hosted a fiesta for some of our friends in the Bean Town. While everyone enjoyed the food, I think dessert was the biggest hit. (Surprise, surprise.) We had brownies (from a box, the horror!) topped with chocolate ganache, and fruit pizza . Fruit pizza is most definitely my "go-to" summer dessert. Since it's the official 1st day of summer, I thought I'd share the recipe! It's delicious without being too heavy or rich. And it's most definitely healthy, because you are eating fruit, right? The recipe I use is my mom's... she's been using it for years. It starts with a basic sugar cookie base, topped with a cream cheese-whipped topping, and then all the fruit your little heart desires! I usually go with strawberries, blueberries, kiwi, pineapple, and mandarin oranges. But raspberries are really good, too. Even better when you pick the fruit yourself! (Picking berries on our honeymoon last July.) ...

2011 Flying Pig Marathon Race Recap

Marathons are hard. But before we get to the actual marathon, let's rewind a bit to Saturday afternoon. We arrived in Cincy around 2pm, and hit up marathon expo. Goodness sakes, I had never seen a room so large filled with so many runners. Everyone was so excited, you could almost feel the energy. We weaved our way through the exhibitors and what they had to offer. (Think free dark chocolate almond granola samples! Yum! I also might have snagged some info on the Disney Half & Marathon in January... we shall see.) We also stopped for a few fun photo ops. Posing with a balloon flying pig. These were everywhere! Flying pigs with all sorts of themes. They were so cute! After the expo, we headed to our early-bird dinner.
