As long as I remember, I have loved to entertain. I love having people over, cooking a nice meal, and sending them home with full, happy bellies. It also gives me a chance to try out fun recipes that I wouldn't make just for me and my Business Man.
My love for hosting dinners and parties all started when I was about 16 years old. I decided that I wanted to throw a fancy schmancy dinner party for all my friends, and of course I enlisted my (then would-be) Business Man's help. We prepared the most gourmet meal we could (at that age) for all our closest friends, and dined al fresco on my parents' patio.
It was such a good time, that we continued on the tradition for another 5 years! If only we all lived near each other and could continue on the tradition to this day.
I'm having a hard time recalling what we even served at that first dinner party... I know we had grilled steak-on-a-stick and some sort of potato. What I will never forget though, is the dessert. Chocolate mousse!
You see, I had never tasted chocolate mousse before, and my Business Man's mom had this fabulous recipe. We made it for everyone, and it was an absolute hit! It became the dessert we served every year at the subsequent dinner parties throughout the next few summers. It always brings back such great memories.
So, my Business Man and I decided to make it today to celebrate Valentine's Day. We spent some QT in the kitchen this afternoon whipping it up, and now we're just waiting for it to set up in the fridge! After our delicious dinner of BBQ Chicken Pizza, it will be the perfect dessert to end the night.
Don't be intimidated by the recipe! Yes, it dirties a lot of dishes, and yes, you have to use a mixer for a long time. But it is so worth it! Bring out your trusty Kitchen-aid if you have one; it'll make your life a lot easier. Also, make sure you don't get any egg yolks into your whites! The result will not be good. (Yes, it's happened to me.)

6 servings- 1 envelope unflavored gelatin
- ⅔ cup sugar, divided
- ½ cup water
- 1 cup semisweet chocolate chips
- 4 eggs, separated
- 1 tsp. vanilla extract
- ¼ tsp. salt
- 1 cup heavy cream, whipped
